Ingredients

1 pound frozen chopped spinach, thawed and well-drained

8 ounces cream cheese, softened

1 cup sour cream

2 large eggs

1 ½ cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon butter, for greasing the dish


Instructions

1. Preheat the oven to 350°F and grease a 9×13-inch baking dish with butter.

2. Thaw and thoroughly drain the spinach by squeezing out excess water using a clean towel or mesh strainer.

3. In a large bowl, mix together the cream cheese, sour cream, eggs, garlic powder, onion powder, salt, and pepper until smooth.

4. Fold in the spinach, ¾ cup of the mozzarella cheese, and ½ cup of the Parmesan cheese until well combined.

5. Spread the mixture evenly in the prepared baking dish.

6. Top with the remaining ¾ cup mozzarella and ½ cup Parmesan cheese.

7. Bake for 35–40 minutes until golden brown and bubbling on top.

8. Let it rest for 5–10 minutes before serving.

Notes

Be sure to remove as much water as possible from the spinach to avoid a soggy texture.

For a bit of kick, add a pinch of red pepper flakes to the mix.

This casserole can be assembled ahead and baked fresh when ready to serve.
