1 can (20 oz) crushed pineapple with juice

1 package (3.4 oz) instant pistachio pudding mix

1 ½ cups mini marshmallows

2 tablespoons dried cranberries or chopped almonds (optional for garnish)


Instructions

1. In a large bowl, combine the crushed pineapple with its juice and the instant pistachio pudding mix. Stir until the pudding mix dissolves and the mixture thickens slightly.

2. Gently fold in the whipped topping until the mixture is light and creamy. Avoid overmixing to keep it fluffy.

3. Stir in the mini marshmallows evenly throughout the salad.

4. Mix in most of the chopped pistachios, reserving some for garnish.

5. Cover the bowl and refrigerate for at least 2 hours or overnight.
