Ingredients
9 cups crisp rice or corn square cereal
1 1/2 cups semi-sweet chocolate chips
3/4 cup creamy peanut butter
1 cup thick caramel sauce
1 cup sweetened shredded coconut
1 1/2 cups powdered sugar
1 teaspoon vanilla extract
1 cup pretzel pieces
Instructions
1. Preheat oven to 350°F. Spread the 1 cup shredded coconut on a baking sheet and toast for 5–7 minutes until golden. Let cool completely.
2. In a large microwave-safe bowl, combine 1 1/2 cups semi-sweet chocolate chips and 3/4 cup creamy peanut butter. Microwave in 30-second intervals, stirring each time, until smooth. Stir in 1 teaspoon vanilla extract.
3. Place 9 cups cereal in a very large mixing bowl. Pour the melted chocolate mixture over the cereal and gently fold until evenly coated.
4. Drizzle 1 cup thick caramel sauce over the coated cereal. Add the cooled toasted coconut and gently toss to distribute without crushing the cereal.
5. Transfer the mixture to a large zip-top bag. Add 1 1/2 cups powdered sugar, seal, and shake until fully coated.
6. Spread the mixture onto parchment paper to set for 20–30 minutes.
7. Once set, gently fold in 1 cup pretzel pieces and serve.
