Ingredients
1 cup creamy peanut butter
1/2 cup unsalted butter softened
3/4 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups white chocolate chips
36 mini chocolate chips
18 orange candy pieces
2 tablespoons holiday sprinkles
Instructions
1. Preheat oven to 350°F and line a baking sheet with parchment paper.
2. In a large bowl, cream together peanut butter, softened butter, brown sugar, and granulated sugar until light and fluffy.
3. Mix in the egg and vanilla extract until fully combined.
4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet mixture and mix until a soft dough forms.
5. Roll dough into 18 equal balls and place on prepared baking sheet. Slightly flatten each ball.
6. Bake for 9 to 11 minutes until edges are set and centers are still soft. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
7. Melt white chocolate chips in 30 second intervals in the microwave, stirring between each interval until smooth.
8. Spoon melted white chocolate over each cooled cookie and gently spread outward to create a melted snow effect.
9. Immediately decorate each cookie with 2 mini chocolate chips for eyes, 1 orange candy piece for the nose, and additional mini chocolate chips as buttons. Add sprinkles while chocolate is still soft.
10. Allow chocolate to set completely before serving.
Notes
Do not overbake the cookies. They should look slightly soft in the center when removed from the oven, as they will continue to firm up while cooling.
