Ingredients

20 oz cheese tortellini

6 slices thick cut bacon

8 oz Andouille sausage, sliced

3 cloves garlic, minced

1 1/2 cups heavy cream

1 1/2 teaspoons Cajun seasoning

1 cup Parmesan cheese, freshly grated

1/2 cup cherry tomatoes, halved

1 cup mozzarella cheese, shredded

2 tablespoons fresh parsley, chopped


Instructions

1. Boil a pot of salted water and cook the tortellini according to package directions. Drain and set aside.

2. In a large skillet over medium heat, cook the bacon until crispy. Remove and place on paper towels. Leave 1 tablespoon of the bacon grease in the skillet.

3. Add the sliced Andouille sausage to the pan and sear for 4–5 minutes until browned. Remove and set aside.

4. Add the minced garlic to the same skillet and cook for 1 minute. Pour in the heavy cream and stir in the Cajun seasoning. Bring to a simmer.

5. Stir in the grated Parmesan cheese and simmer for 2–3 minutes until the sauce thickens.

6. Return the tortellini, sausage, and chopped bacon to the skillet and toss to coat in the sauce.

7. Add the cherry tomatoes and sprinkle the mozzarella cheese on top. Cover and cook for 3–4 minutes until the cheese melts.

8. Garnish with chopped parsley and a pinch of extra Cajun seasoning before serving.

Notes

Use freshly grated Parmesan for the smoothest sauce.

Add a splash of cream or milk when reheating leftovers.

To make it spicier, increase Cajun seasoning or add a pinch of cayenne.
