6 cups romaine lettuce, chopped

1/2 red onion, thinly sliced

1/3 cup walnuts, roughly chopped

1/3 cup dried cranberries

3 tablespoons olive oil

1 tablespoon red wine vinegar

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Wash and dry romaine lettuce, then chop into bite-sized pieces.

2. Slice the cucumbers, halve the cherry tomatoes, and thinly slice the red onion.

3. In a large bowl, layer the romaine lettuce, cucumbers, tomatoes, and red onions.

4. Top with dried cranberries, chopped walnuts, and crumbled feta cheese.

5. In a small bowl or jar, whisk together the olive oil, red wine vinegar, salt, and pepper until emulsified.
