Ingredients

2 heads garlic

1 yellow onion, chopped

2 tablespoons olive oil

4 cups vegetable broth

1 bay leaf

3 sprigs fresh thyme

1 lime, juiced

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons chopped chives

2 tablespoons chopped parsley or cilantro

6 slices baguette

1 tablespoon butter


Instructions

1. Preheat oven to 400°F. Slice the tops off two heads of garlic, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 35 minutes until golden and soft.

2. In a large saucepan, heat 1 tablespoon olive oil over medium heat. Add chopped onion and cook until translucent and slightly golden, about 5-7 minutes.

3. Squeeze the roasted garlic cloves into the saucepan. Add 4 cups of vegetable broth, 1 bay leaf, and 3 sprigs of fresh thyme. Simmer for 20 minutes to let the flavors meld.

4. Remove the bay leaf and thyme sprigs. Use an immersion blender or transfer to a blender in batches to puree the soup until smooth.

5. Stir in the juice of 1 lime, salt, and black pepper to taste. Keep warm on low heat.

6. In a skillet, melt 1 tablespoon butter and toast 6 baguette slices until golden and crisp on both sides.

7. Ladle soup into bowls, top with toasted baguette slices, sprinkle with chopped chives and parsley, and serve with an extra lime wedge.

Notes

Use fresh garlic for best flavor, and don’t skip roasting!

Toast the bread just before serving to keep it crispy.

For a vegan version, swap butter for more olive oil.
