Ingredients

3 tablespoons maple syrup

1 tablespoon Dijon mustard

2 tablespoons olive oil

5 medium carrots, peeled and sliced lengthwise

2 medium apples, cored and sliced into wedges

1 tablespoon fresh rosemary, chopped

1 teaspoon salt

¼ teaspoon black pepper

¼ teaspoon red pepper flakes (optional)

1 teaspoon fresh thyme leaves (for garnish)


Instructions

1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with olive oil.

2. Peel and trim the carrots, then slice them lengthwise into thick sticks. Core and slice the apples into wedges. Add both to a large mixing bowl.

3. In a small bowl, whisk together the olive oil, maple syrup, Dijon mustard, chopped rosemary, salt, pepper, and red pepper flakes if using.

4. Pour the glaze over the carrots and apples, then toss to coat everything evenly.

5. Spread the coated carrots and apples in a single layer on the prepared baking sheet.

6. Roast for 30–35 minutes, turning halfway through, until tender and caramelized.

7. Transfer to a serving dish and sprinkle with fresh thyme before serving.

Notes

Use firm apple varieties like Honeycrisp or Pink Lady so they don’t turn mushy.

Don’t overcrowd the baking sheet—use two if necessary to ensure caramelization.

Add red onions or sweet potatoes for an earthy twist.
