Ingredients

1 cup chopped pitted dates

1 1/4 cups all-purpose flour

1/2 cup unsalted butter, melted

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/3 cup chopped pecans (optional)


Instructions

1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

2. In a large bowl, mix melted butter, brown sugar, and granulated sugar until well combined.

3. Whisk in the egg and vanilla extract until smooth.

4. In another bowl, whisk together flour, baking soda, salt, and cinnamon.

5. Gradually stir the dry ingredients into the wet ingredients just until incorporated.

6. Fold in chopped dates and pecans until evenly mixed.

7. Scoop dough onto prepared baking sheets using a tablespoon or cookie scoop, spacing 2 inches apart.

8. Bake for 10–12 minutes or until edges are golden and centers are set.

9. Let cookies cool on the sheet for 5 minutes before transferring to a wire rack.

Notes

Let the butter cool slightly before mixing to avoid cooking the egg.

For best texture, don’t overmix once dry ingredients are added.
