Ingredients
300 g flank or sirloin steak
250 g linguine or spaghetti
4 cloves garlic, minced
4 tbsp soy sauce
2 tbsp brown sugar
1–2 red chilies, sliced (or 1 tsp chili flakes)
1 tbsp sesame oil
2 green onions, chopped
1 tsp sesame seeds
2 tbsp olive oil
1 tbsp butter
60 ml reserved pasta water
Instructions
1. Combine soy sauce, brown sugar, minced garlic, sesame oil, and chili in a bowl. Add thinly sliced steak and marinate for 20–30 minutes.
2. Boil linguine or spaghetti according to package directions. Reserve 1/4 cup of pasta water before draining.
3. Heat olive oil in a large skillet over high heat. Sear marinated steak slices for 2–3 minutes per side until nicely browned. Remove and set aside.
4. In the same skillet, melt butter and sauté remaining garlic and chilies. Add pasta water and simmer until slightly thickened.
5. Toss the cooked pasta in the sauce. Add steak back to the pan, garnish with green onions and sesame seeds, and serve immediately.
Notes
Always slice steak against the grain for maximum tenderness.
Adjust spice levels by reducing or increasing the chilies or flakes.
Reheat gently with a splash of water to revive the sauce’s texture.
