Ingredients

1 ½ pounds chicken wings (split drumettes and wingettes)

½ cup all-purpose flour

¼ cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

⅓ cup honey

¼ cup brown sugar

3 tablespoons soy sauce

2 tablespoons rice vinegar

1 teaspoon chili flakes

2 cloves garlic, minced

1 teaspoon hot sauce (optional)

1 tablespoon sesame seeds

2 tablespoons chopped scallions

Oil for frying


Instructions

1. Pat the chicken wings dry with paper towels.

2. In a bowl, mix flour, cornstarch, garlic powder, onion powder, salt, and pepper. Toss the wings in this mixture until well coated.

3. Heat oil in a deep pan or fryer to 350°F (175°C). Fry the wings in batches for 8–10 minutes or until golden brown and cooked through. Drain on paper towels.

4. In a small saucepan, combine honey, brown sugar, soy sauce, rice vinegar, chili flakes, minced garlic, and hot sauce. Simmer for 2–3 minutes until slightly thickened.

5. Toss the fried wings in a large bowl with the glaze until fully coated.

6. Garnish with sesame seeds and chopped scallions before serving.

Notes

For extra crispy wings, double fry them: fry once at a lower temp, rest, then fry again at 375°F.

You can bake the wings instead of frying for a lighter version.

Make the glaze ahead and store in the fridge for up to 2 days—just reheat gently before using.
