Ingredients

1 tablespoon olive oil

4 large bell peppers (any color)

1 pound ground beef

1 cup cooked white rice

1 medium onion, finely chopped

2 cloves garlic, minced

1 1/2 cups tomato sauce

1 teaspoon salt

1/2 teaspoon black pepper

1 1/2 cups shredded mozzarella or cheddar cheese

2 tablespoons chopped fresh parsley (for garnish)


Instructions

1. Preheat your oven to 375°F (190°C).

2. Slice the tops off the bell peppers and remove seeds and membranes.

3. Blanch peppers in boiling water for 3-4 minutes to slightly soften. Drain and set aside.

4. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until soft.

5. Add garlic and ground beef. Cook until beef is browned and cooked through.

6. Stir in the cooked rice, tomato sauce, salt, and pepper. Simmer the mixture for 5 minutes.

7. Spoon the mixture into each bell pepper, packing it down gently.

8. Place stuffed peppers in a baking dish. Top with shredded cheese.

9. Cover with foil and bake for 25-30 minutes.

10. Remove foil and bake another 10 minutes until cheese is melted and golden.

11. Remove from oven, garnish with parsley, and let cool slightly before serving.

You can swap rice for quinoa or cauliflower rice for a low-carb version.
