Ingredients

2 boneless skinless chicken breasts

2 packs ramen noodles (discard seasoning packet)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 cups chicken broth

1 cup full-fat coconut milk or heavy cream

2 tablespoons soy sauce

1 tablespoon chili garlic sauce or sriracha

2 soft-boiled eggs, halved

2 tablespoons sesame oil

3 stalks green onions, chopped

1 teaspoon paprika

1 teaspoon garlic powder

Salt and black pepper to taste


Instructions

1. Pat the chicken dry and season with salt, pepper, paprika, and garlic powder.

2. Grill or pan-sear chicken over medium heat until fully cooked and slightly charred. Let rest, then slice.

3. In a large pot, heat sesame oil. Sauté garlic and ginger until fragrant (1-2 minutes).

4. Pour in chicken broth, add soy sauce and chili garlic sauce. Stir in coconut milk or cream. Simmer 5-10 minutes.

5. Cook ramen noodles separately according to package instructions. Drain and set aside.

6. Assemble bowls: place noodles, pour over hot broth, add sliced chicken, halved soft-boiled eggs, and chopped green onions.

Notes

For a dairy-free option, use full-fat coconut milk instead of cream.
