Ingredients
1 lb chicken thighs, boneless and skinless, cut into chunks
12 oz shrimp, peeled and deveined
8 oz andouille sausage, sliced
1 red bell pepper, diced
1 green bell pepper, diced
1 medium onion, chopped
2 celery stalks, chopped
4 garlic cloves, minced
2 tbsp Cajun seasoning
1 tsp smoked paprika
1 can (14.5 oz) diced tomatoes
3 cups chicken broth
1 1/2 cups long grain rice
1/4 cup chopped green onions
2 tbsp fresh parsley, chopped
Instructions
1. Brown the sausage in a large skillet or Dutch oven over medium heat. Remove and set aside.
2. In the same pot, sear the chicken until golden. Remove and set aside with the sausage.
3. Add the onions, bell peppers, celery, and garlic. Sauté until tender, scraping up any browned bits.
4. Stir in Cajun seasoning, paprika, and diced tomatoes. Return the chicken and sausage to the pan.
5. Pour in chicken broth and bring to a simmer.
6. Add the rice, stir well, cover, and cook on low for 20-25 minutes or until rice is tender.
7. Nestle the shrimp on top during the last 5-7 minutes of cooking. Cover again and let the shrimp steam.
8. Once shrimp are cooked, fluff the rice and garnish with green onions and parsley. Serve hot!
Notes
For a spicier kick, add cayenne pepper or hot sauce at the end.
Swap shrimp for more sausage or white fish if desired.
Long grain rice works best; avoid quick-cook or sticky rice.
