Ingredients
2 cups mashed sweet potatoes
1/2 cup unsalted butter, melted
1/2 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs
3/4 cup evaporated milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 9-inch unbaked pie crust
Instructions
1. Preheat the oven to 400°F. Wash and prick sweet potatoes. Roast for 45 minutes or until tender. Let cool, peel, and mash until smooth.
2. In a large bowl, mix mashed sweet potatoes with melted butter, granulated sugar, brown sugar, eggs, evaporated milk, vanilla, cinnamon, nutmeg, and salt until fully combined and smooth.
3. Preheat oven to 350°F. Pour filling into the unbaked pie crust and smooth the top.
4. Bake for 55–60 minutes or until set and a knife inserted in the center comes out clean.
