3 to 4 pounds turkey wings

1 large onion sliced

2 stalks celery chopped

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon dried thyme

2 tablespoons olive oil

3 tablespoons butter

3 tablespoons all-purpose flour

2 cups chicken broth


Instructions

1. Clean and pat dry the turkey wings. Season with salt, black pepper, paprika, smoked paprika, garlic powder, and thyme. Let rest to marinate briefly.

2. Heat olive oil in a skillet. Sear the turkey wings on both sides until golden brown. Remove and set aside.

3. In the same skillet, sauté onions, celery, and garlic until fragrant and softened.

4. Add butter, then stir in flour to make a roux. Cook for a minute.

5. Slowly whisk in chicken broth until smooth. Simmer until thickened into a rich gravy.
