Ingredients
2 pounds boneless skinless chicken thighs
3/4 cup low-sodium soy sauce
1/2 cup brown sugar
1/4 cup honey
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons rice vinegar
1 teaspoon sesame oil
1/2 cup chicken broth
2 tablespoons cornstarch
2 tablespoons water
4 cups broccoli florets
3 cups cooked rice
2 green onions, sliced
1 tablespoon sesame seeds
Instructions
1. Whisk together the soy sauce, brown sugar, honey, garlic, ginger, rice vinegar, sesame oil, and chicken broth in a medium bowl.
2. Place the chicken thighs in the slow cooker and pour the teriyaki sauce mixture over the top.
3. Cover and cook on low for 4 to 5 hours or on high for 2 1/2 to 3 1/2 hours, until the chicken is tender and fully cooked.
4. Remove the chicken and shred it with two forks, or cut it into bite-sized pieces if you prefer.
5. In a small bowl, stir together the cornstarch and water to make a slurry.
6. Pour the slurry into the slow cooker sauce and stir well. Cover and cook for 10 to 15 minutes more, until the sauce thickens.
7. Return the chicken to the slow cooker and toss it in the thickened sauce.
8. Steam the broccoli until crisp-tender.
9. Serve the teriyaki chicken over cooked rice with broccoli, then garnish with green onions and sesame seeds.
Notes
Do not add the cornstarch slurry at the beginning, or the sauce can turn gluey during the long cooking time instead of becoming smooth and glossy at the end.
