Ingredients
2.5 pounds chuck roast
3 cups beef broth
2 tablespoons Worcestershire sauce
1 large onion, sliced
3 cloves garlic, minced
2 tablespoons soy sauce
1 teaspoon dried thyme
1 bay leaf
6 slices provolone cheese
6 French rolls or hoagie buns
Instructions
1. Place the chuck roast in the slow cooker and top with sliced onions and minced garlic.
2. Add beef broth, Worcestershire sauce, soy sauce, thyme, and bay leaf.
3. Cover and cook on low for 8 hours or high for 4–5 hours until beef is tender.
4. Remove beef, shred with two forks, discard excess fat, then return it to the juices and cook for 15–20 more minutes.
5. Preheat oven to 375°F.
6. Slice and toast the rolls lightly on a baking sheet for 5 minutes.
7. Pile shredded beef onto bottom halves of each roll, top with a slice of provolone, and return to the oven until cheese melts.
8. Strain the cooking liquid and serve it in small bowls alongside the sandwiches for dipping.
