Ingredients

2 large Russet potatoes, diced and parboiled

1 cup smoked sausage or bacon, chopped

1 red bell pepper, diced

1 small onion, diced

3 eggs

2 tablespoons olive oil or butter

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped green onions or chives (for garnish)


Instructions

1. Cut potatoes into small cubes and parboil in salted water for 5 minutes. Drain and set aside.

2. In a large skillet, cook sausage or bacon over medium heat until browned and crispy. Remove and set aside.

3. In the same skillet, sauté diced onions and bell peppers until softened and caramelized (5–7 minutes).

4. Add olive oil or butter, then toss in the parboiled potatoes. Let them cook undisturbed to form a crispy crust. Season with salt and pepper.

5. Return sausage or bacon to the skillet and stir to combine.

6. Make 3 small wells in the hash and crack one egg into each.

7. Cover skillet and cook on low until egg whites set but yolks remain runny (about 5 minutes).

8. Garnish with green onions or chives. Serve hot.

Notes

For best results, use starchy potatoes like Russets for maximum crispiness.

Make sure the skillet is hot before adding potatoes to help them sear.

Want to go vegetarian? Skip the meat and double up on peppers, onions, or even mushrooms.
