Description

Ingredients

1 cup long-grain white rice

2 cups water

1 tablespoon olive oil

12 ounces smoked sausage, sliced

1 small onion, diced

1 green bell pepper, diced

2 celery stalks, diced

3 cloves garlic, minced

2 cans red beans, drained and rinsed

1 can diced tomatoes

2 cups chicken broth

1 teaspoon paprika

1 teaspoon Cajun seasoning

1/2 teaspoon dried thyme

1/2 teaspoon black pepper

1/2 teaspoon salt

2 tablespoons green onions, sliced


Instructions

1. Cook the rice in water according to package directions until tender and fluffy, then set aside.

2. Heat the olive oil in a large skillet or Dutch oven over medium heat.

3. Add the sliced smoked sausage and cook until browned around the edges.

4. Stir in the onion, green bell pepper, and celery, then cook until softened.

5. Add the garlic and cook for about 30 seconds until fragrant.

6. Stir in the red beans, diced tomatoes, chicken broth, paprika, Cajun seasoning, dried thyme, black pepper, and salt.

7. Bring the mixture to a gentle simmer and cook until slightly thickened and flavorful.

8. Lightly mash a few of the beans with the back of a spoon for a creamier texture, if desired.

9. Spoon the cooked rice into bowls and ladle the red bean mixture over the top.

10. Finish with sliced green onions and serve warm.

Notes

Do not add the rice directly into the bean mixture too early, or it can absorb too much liquid and turn mushy instead of staying fluffy.
