Ingredients
2 cups all-purpose flour
1/2 cup powdered sugar
1/4 teaspoon salt
1 cup unsalted butter (cold, cut into cubes)
1 cup packed brown sugar
1 cup light corn syrup
4 large eggs
2 teaspoons vanilla extract
1/2 teaspoon salt
2 cups chopped pecans
Instructions
1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper, leaving an overhang.
2. In a medium bowl, mix flour, powdered sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
3. Press the crust into the bottom of the pan evenly. Bake for 20 minutes until lightly golden.
4. While crust bakes, whisk brown sugar, corn syrup, eggs, vanilla, and salt until smooth.
5. Fold in chopped pecans.
6. Pour pecan filling over the warm crust and spread evenly. Optionally top with pecan halves.
7. Bake for 30–35 minutes or until filling is set.
8. Let cool completely (up to 2 hours), then lift using parchment and slice into 24 bars.
Notes
Use parchment paper for easy lifting and cleaner cuts.
Toasting the pecans before folding them in enhances the flavor.
Store leftovers in an airtight container at room temp or fridge up to 1 week.
