Ingredients

1 pound ground pork

1 tablespoon maple syrup

1 teaspoon dried sage

1/2 teaspoon dried thyme

1/2 teaspoon crushed red pepper flakes

3/4 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon olive oil or butter (for frying)


Instructions

1. In a large bowl, combine sage, thyme, crushed red pepper flakes, salt, black pepper, garlic powder, and onion powder. Stir well.

2. Add the ground pork and maple syrup to the spice mix. Mix thoroughly with your hands or a sturdy spoon until evenly blended.

3. Divide the mixture into 8 equal portions and form each into a patty about 3 inches wide and 1/2 inch thick.

4. Heat olive oil or butter in a large skillet over medium heat.

5. Add patties in batches and cook 3–4 minutes per side, or until golden brown and internal temperature reaches 160°F.

6. Transfer cooked patties to a paper towel-lined plate. Serve hot or let cool for storage.

Notes

Don’t overmix the meat—it keeps the patties tender.

You can prep and freeze these raw or cooked for up to 2 months.

For leaner sausage, substitute half or all of the pork with ground turkey (not extra lean).
