Ingredients

2 links smoked sausage

3 cups baby potatoes

1 ½ cups carrots

1 ½ cups zucchini

1 cup bell peppers

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon fresh rosemary or thyme (optional)


Instructions

1. Preheat your oven to 400°F (200°C). Wash and chop all vegetables into bite-sized pieces. Slice sausage into thick rounds.

2. In a large bowl, toss sausage and veggies with olive oil and all seasonings. Make sure everything is evenly coated.

3. Spread mixture onto a parchment-lined or greased sheet pan in a single layer.

4. Roast for 30–40 minutes, flipping halfway through, until veggies are tender and slightly crisped.
