Ingredients
0.5 lb breakfast sausage, cooked and crumbled
1 cup pancake mix
0.75 cup milk or water
1 egg
0.5 cup shredded cheddar or mozzarella cheese
2 tablespoons maple syrup (optional for drizzling)
Instructions
1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with silicone liners.
2. In a skillet over medium heat, cook the sausage until browned and crumbled. Drain and set aside.
3. In a mixing bowl, combine pancake mix, egg, and milk or water. Stir until just combined; do not overmix.
4. Spoon about 1 tablespoon of batter into each mini muffin cup.
5. Top each with a teaspoon of sausage and a sprinkle of shredded cheese. Drizzle a little maple syrup on top if using.
6. Bake for 15–18 minutes until golden brown and a toothpick inserted comes out clean.
7. Let cool for 5 minutes in the pan, then transfer to a wire rack. Serve warm.
Notes
Don’t overmix the batter—this helps keep the bites fluffy.
You can freeze cooked bites and reheat in the microwave or oven.
For added flavor, try mixing cheddar and mozzarella cheese together.
