Ingredients

1 pound breakfast sausage

8 large eggs

2 cups whole milk

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

6 cups day-old bread cubes

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon chopped fresh parsley


Instructions

1. Preheat oven to 350°F and grease a 9×13-inch baking dish.

2. In a large skillet over medium heat, cook 1 pound breakfast sausage until fully browned, breaking it into crumbles. Drain excess grease.

3. Spread 6 cups bread cubes evenly in the prepared baking dish.

4. Sprinkle the cooked sausage evenly over the bread cubes.

5. Add 2 cups shredded cheddar cheese and 1 cup shredded mozzarella cheese evenly over the sausage layer.

6. In a large bowl, whisk together 8 large eggs, 2 cups whole milk, 1 teaspoon salt, and 1/2 teaspoon black pepper until smooth.

7. Pour the egg mixture evenly over the casserole, making sure all bread is coated.

8. Let the casserole rest for 20 minutes (or cover and refrigerate overnight).

9. Bake for 40–45 minutes, until the center is set and the top is golden brown.

10. Cool for 10 minutes, garnish with 1 tablespoon chopped fresh parsley, slice into 8 portions, and serve.
