3 tbsp olive oil

1 tbsp chopped fresh mint

1/2 tsp salt

1/4 tsp black pepper

1 cup fresh strawberries, diced

2 tbsp fresh basil, chopped

1/4 tsp red chili flakes (optional)

2 cups cooked rice or grain of choice

2 lime wedges


Instructions

1. In a bowl, combine the diced strawberries, chopped basil, a pinch of salt, and a drizzle of olive oil. Stir gently and refrigerate while you prepare the shrimp.

2. In a separate bowl, whisk together lemon juice, lemon zest, minced garlic, honey, parsley, olive oil, salt, and pepper. Toss the shrimp in the marinade and let it sit for 10–15 minutes.
