Ingredients

2 cups flaked salmon

0.5 cup panko breadcrumbs

1 egg

2 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 tablespoon chopped parsley

1 green onion, sliced

1 garlic clove, minced

1 teaspoon lemon zest

0.5 teaspoon paprika

0.25 teaspoon black pepper

1 tablespoon olive oil

1 tablespoon butter

0.25 cup Greek yogurt (or sour cream)

1 tablespoon mayonnaise (for sauce)

1 tablespoon lemon juice

1 garlic clove, minced (for sauce)

1 tablespoon chopped chives

Salt to taste


Instructions

1. In a large mixing bowl, combine flaked salmon, breadcrumbs, egg, mayonnaise, mustard, parsley, green onion, garlic, lemon zest, paprika, and black pepper. Mix gently until just combined.

2. Shape the mixture into 6 equal-sized patties, pressing firmly so they hold together.

3. Heat olive oil and butter in a skillet over medium heat. Cook the patties for 3–4 minutes per side until golden brown and crisp.

4. While the patties cook, make the sauce by combining yogurt (or sour cream), mayo, lemon juice, minced garlic, and chives. Add salt to taste.

5. Serve patties hot with sauce on the side or underneath. Garnish with extra herbs and lemon slices if desired.

Notes

Always drain canned salmon well before using.

Don’t flip the patties too early or they may fall apart.
