Ingredients
1 pound ground sausage
8 ounces cream cheese, softened
10 ounces Rotel tomatoes with green chiles, drained
1 1/2 cups shredded cheddar cheese
1 cup baking mix or almond flour
2 tablespoons chopped parsley or chives (optional, for garnish)
Instructions
1. Preheat your oven to 375°F. Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
2. In a large mixing bowl, combine ground sausage, cream cheese, drained Rotel, shredded cheddar, and baking mix or almond flour. Mix until fully incorporated.
3. Roll the mixture into 1 1/2-inch balls using a cookie scoop or tablespoon and place evenly on the baking sheet.
4. Bake for 20–23 minutes or until golden brown and fully cooked through.
5. Remove from oven, let cool slightly, then garnish with chopped parsley or chives if desired. Serve warm.
