Ingredients

1 1/2 cups crushed graham crackers or gingersnaps

1/2 cup unsalted butter, melted

1/4 cup brown sugar (for crust)

16 oz cream cheese, softened

1/2 cup granulated sugar

1 egg (for cream cheese layer)

1 tsp vanilla extract (divided)

2 cups pumpkin puree

2 eggs (for pumpkin layer)

1/2 cup brown sugar (for pumpkin layer)

1 tsp cinnamon

1/4 tsp nutmeg

3/4 cup all-purpose flour

1/2 cup brown sugar (for topping)

1/2 cup chopped pecans

1/3 cup unsalted butter, melted (for topping)

1/2 tsp cinnamon (for topping)


Instructions

1. Preheat oven to 350°F (175°C). In a bowl, mix crushed graham crackers, melted butter, and 1/4 cup brown sugar. Press into the bottom of a greased 9×13-inch baking dish. Bake for 8-10 minutes. Let cool.

2. In a separate bowl, beat cream cheese with granulated sugar, 1 egg, and 1/2 tsp vanilla extract until smooth. Spread over the cooled crust.

3. In another bowl, mix pumpkin puree, 2 eggs, 1/2 cup brown sugar, cinnamon, nutmeg, and remaining vanilla. Spread this over the cream cheese layer.

4. Combine flour, 1/2 cup brown sugar, pecans, 1/2 tsp cinnamon, and melted butter until crumbly. Sprinkle on top of the pumpkin layer.

5. Bake for 45–50 minutes or until the center is set and the top is golden brown. Cool completely before slicing.

Notes

Make sure the cream cheese is fully softened to avoid lumps.

For a gluten-free version, use GF graham crackers and flour.
