Ingredients
3/4 cup all-purpose flour
2/3 cup granulated sugar
4 large eggs
2 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup buttermilk
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 tablespoon red food coloring
8 ounces cream cheese, softened
4 tablespoons unsalted butter, softened
1 cup powdered sugar
1/3 cup heavy cream (optional, for folding into filling)
1/2 cup heavy cream (for topping)
6 fresh strawberries, sliced
Instructions
1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and grease lightly.
2. In a bowl, whisk flour, cocoa powder, baking powder, and salt. In another bowl, beat eggs and granulated sugar until fluffy.
3. Add oil, buttermilk, vanilla, and red food coloring to egg mixture. Stir to combine.
4. Fold in the dry ingredients until just mixed. Do not overmix.
5. Pour batter into prepared pan and spread evenly. Bake for 12–14 minutes until springy.
6. Dust a kitchen towel with powdered sugar. Flip the hot cake onto the towel and peel off parchment paper.
7. Roll the cake (with towel) from short end. Let it cool completely.
8. Beat cream cheese and butter until smooth. Add powdered sugar gradually and beat until fluffy.
9. Optional: Fold in 1/3 cup whipped heavy cream for a lighter filling.
10. Unroll cooled cake. Spread filling evenly, then roll it up again (without towel). Wrap in plastic and chill for 1 hour.
11. Whip 1/2 cup heavy cream and pipe on top. Add sliced strawberries before serving.
