Ingredients

2 cups chocolate sandwich cookies, crushed

6 tablespoons melted butter

8 ounces cream cheese, softened

3/4 cup powdered sugar

1 1/2 cups heavy whipping cream

2 cups fresh raspberries

1 1/4 cups chocolate ganache or pudding

1/4 cup mini chocolate chips or grated chocolate


Instructions

1. Crush chocolate sandwich cookies into fine crumbs and mix with melted butter until well combined.

2. Press the mixture firmly into the bottom of a 9×13-inch dish to form the base. Chill for 10 minutes.

3. Beat cream cheese and powdered sugar together until smooth and creamy.

4. In a separate bowl, whip the heavy cream until stiff peaks form.

5. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

6. Spread half of the cream cheese mixture evenly over the chilled cookie crust.

7. Top with a layer of fresh raspberries, pressing them lightly into the cream.

8. Add another layer of crushed cookies.

9. Spread the remaining cream mixture over the second cookie layer.

10. Pour the chocolate ganache or pudding over the top layer and smooth it out evenly.

11. Chill the dessert for at least 4 hours or overnight for best results.

12. Before serving, garnish with more raspberries and sprinkle with mini chocolate chips or grated chocolate.

Notes

Chill longer for cleaner slices. Overnight is best!

You can swap raspberries for strawberries or blackberries.

Use stabilized whipped cream if serving at a warm event.
