Ingredients
1 1/2 pounds boneless skinless chicken thighs
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
3 cloves garlic, minced
1 small yellow onion, chopped
1 cup long-grain rice
2 cups chicken broth
1 tablespoon lemon juice
1 red bell pepper, sliced
1 cup cherry tomatoes
1/2 cup Kalamata olives
1/3 cup crumbled feta cheese
2 tablespoons fresh parsley, chopped
Instructions
1. Preheat the oven to 375°F and lightly grease a casserole dish.
2. Pat the chicken dry and season it with paprika, oregano, salt, and black pepper.
3. In the casserole dish, combine the rice, chopped onion, minced garlic, chicken broth, lemon juice, and olive oil. Stir well.
4. Scatter the sliced red bell pepper, cherry tomatoes, and Kalamata olives over the rice mixture.
5. Arrange the seasoned chicken on top of the rice and vegetables in a single layer.
6. Cover the dish tightly with foil and bake until the rice begins to soften and the chicken cooks through.
7. Remove the foil and continue baking until the chicken is golden and the remaining liquid is mostly absorbed.
8. Sprinkle the top with feta cheese and fresh parsley.
9. Let the casserole rest for a few minutes before serving.
Notes
Do not uncover the casserole too early, or the rice may not finish cooking properly and can turn out unevenly tender.
