Ingredients

1 cup strong brewed coffee or espresso, cooled

1 cup canned pumpkin puree

1 cup heavy cream

1 cup granulated sugar

8 ounces mascarpone cheese

1 teaspoon vanilla extract

2 teaspoons pumpkin pie spice

24 ladyfingers (savoiardi style)

2 tablespoons unsweetened cocoa powder (for dusting)


Instructions

1. In a large bowl, whisk together mascarpone, pumpkin puree, sugar, vanilla, and pumpkin pie spice until smooth.

2. In another bowl, beat heavy cream until stiff peaks form. Gently fold into the pumpkin mascarpone mixture until fully incorporated.

3. Pour the cooled coffee into a shallow dish. Quickly dip each ladyfinger into the coffee, making sure not to oversoak.

4. Layer half of the dipped ladyfingers into an 8×8 dish. Spread half of the pumpkin cream mixture over the top.

5. Repeat with another layer of dipped ladyfingers and top with remaining cream.

6. Cover and refrigerate for at least 6 hours or overnight.

7. Just before serving, dust the top generously with cocoa powder.

8. Slice and serve chilled.

Notes

Whip the cream until stiff peaks form to ensure a stable creamy layer.

Use crisp ladyfingers to prevent sogginess after soaking.

Letting it chill overnight deepens the flavor and improves the texture.
