Description

Ingredients

2 tablespoons olive oil

1 medium yellow onion, diced

3 cloves garlic, minced

1 jalapeño, seeded and sliced

3 cups cooked shredded chicken

2 cans white beans, drained and rinsed

1 1/2 cups corn

2 cans diced green chiles

4 cups chicken broth

4 ounces cream cheese, softened

1 cup heavy cream

1 1/2 cups shredded Monterey Jack cheese

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh cilantro

1 tablespoon lime juice


Instructions

1. Heat olive oil in a large pot over medium heat. Add the diced onion and cook until softened.

2. Stir in the garlic and jalapeño, then cook for about 1 minute until fragrant.

3. Add cumin, oregano, chili powder, salt, and black pepper, stirring well to coat the aromatics.

4. Add the shredded chicken, white beans, corn, diced green chiles, and chicken broth. Stir everything together.

5. Bring the chili to a gentle simmer and cook for 20 to 25 minutes, stirring occasionally.

6. Lightly mash some of the beans against the side of the pot to thicken the chili if desired.

7. Lower the heat and stir in the cream cheese until fully melted and smooth.

8. Pour in the heavy cream and add the Monterey Jack cheese, stirring until the chili is creamy and the cheese has melted.

9. Stir in the cilantro and lime juice, then taste and adjust seasoning if needed.

10. Serve hot with extra cheese, jalapeños, cilantro, sour cream, or tortilla chips if you like.

Notes

Do not boil the chili after adding the cream cheese, heavy cream, and shredded cheese, or the texture can turn grainy instead of smooth and creamy.
