Ingredients
16 oz cream cheese, softened
8 oz crushed pineapple, very well drained
1 1/2 cups sharp cheddar cheese, shredded
1/4 cup green bell pepper, finely chopped
2 green onions, finely sliced
3/4 cup pecans, finely chopped
1/2 tsp seasoned salt
1/4 tsp garlic powder
1/4 tsp black pepper
Instructions
1. In a mixing bowl, beat the softened cream cheese until smooth and creamy.
2. Add the drained crushed pineapple, shredded cheddar cheese, chopped green bell pepper, sliced green onions, half of the chopped pecans, seasoned salt, garlic powder, and black pepper.
3. Mix until everything is evenly combined.
4. Cover the bowl and refrigerate the mixture for 30 to 45 minutes, or until firm enough to shape.
5. Scoop the chilled mixture onto plastic wrap and form it into a ball.
6. Roll the cheese ball in the remaining chopped pecans until fully coated.
7. Wrap and chill again for at least 1 hour before serving.
8. Serve with crackers, pretzels, or fresh vegetables.
Notes
Be sure to drain the pineapple extremely well, or the cheese ball can turn too soft to hold its shape.
