Ingredients
8 ounces cream cheese, softened
1 cup creamy peanut butter
1 1/2 cups powdered sugar
1 cup graham cracker crumbs
1 teaspoon vanilla extract
12 ounces white chocolate melting wafers
1/4 cup chocolate, melted for drizzle
2 tablespoons graham cracker crumbs, for topping
Instructions
1. Beat the softened cream cheese in a mixing bowl until completely smooth.
2. Add the peanut butter, powdered sugar, graham cracker crumbs, and vanilla extract, then mix until a thick filling forms.
3. Chill the mixture for 30 minutes so it is easier to scoop and roll.
4. Scoop the filling into small portions and roll into balls.
5. Place the balls on a parchment-lined tray and chill again for 20 to 30 minutes.
6. Melt the white chocolate melting wafers until smooth.
7. Dip each ball into the melted white chocolate, letting the excess drip off.
8. Place the coated balls back on the tray and sprinkle with graham cracker crumbs while the coating is still soft.
9. Drizzle the tops with melted chocolate.
10. Chill until the coating is fully set, then serve cold.
Notes
Do not skip the chilling steps, or the filling may be too soft to roll and dip neatly.
