Ingredients

4 large egg whites

1 cup granulated sugar

1 teaspoon cornstarch

1 teaspoon white vinegar or lemon juice

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 cups fresh mixed berries (strawberries, raspberries, blueberries, blackberries)


Instructions

1. Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper and draw an 8-inch circle as a guide.

2. In a clean, dry bowl, beat egg whites on medium speed until soft peaks form.

3. Gradually add sugar, one tablespoon at a time, beating until stiff, glossy peaks form.

4. Gently fold in cornstarch, vinegar, and vanilla extract until just combined.

5. Spoon the meringue into the center of the circle on parchment. Shape into a round with a shallow dip in the middle.

6. Bake for 1 hour and 15 minutes. Turn off oven, crack the door open, and let Pavlova cool completely inside.

7. Whip heavy cream to soft peaks and chill until ready to use.

8. Top cooled Pavlova with whipped cream and fresh berries. Serve immediately.

Notes

Use a clean, grease-free bowl to help egg whites whip properly.

Cool Pavlova slowly in the oven to prevent cracking.

Add toppings just before serving to keep the shell crisp.
