Ingredients

2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

4 ounces cream cheese (softened)

2 tablespoons Greek yogurt

1 tablespoon chopped fresh parsley

1 tablespoon chopped fresh chives

1/2 cup grated Parmesan cheese (divided)

2 tablespoons finely chopped red onion


Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Slice the sweet potatoes into 1/2-inch thick medallions and arrange on the sheet.

3. Drizzle with olive oil and season with salt, pepper, and garlic powder. Flip to coat both sides evenly.

4. Roast for 25 minutes, flipping halfway through, until golden and fork-tender.

5. In a bowl, combine softened cream cheese, Greek yogurt, parsley, chives, and 1/4 cup Parmesan to create the herbed cheese topping.

6. Spoon 1 tablespoon of the cheese mixture onto each roasted medallion.

7. Sprinkle the remaining 1/4 cup Parmesan evenly over the tops.

8. Broil for 2–3 minutes, just until the tops are golden and bubbly.

9. Remove from oven and garnish with red onion and extra herbs if desired.

10. Serve warm or at room temperature.

Notes

Use freshly grated Parmesan for the best flavor and melt.
