Ingredients
1 lb carrots
2 tablespoons olive oil
3 cloves garlic
1/3 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped parsley
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet.
2. Peel and cut carrots into evenly sized pieces.
3. Toss carrots with olive oil, garlic, salt, and pepper.
4. Arrange carrots in a single layer on the baking sheet.
5. Roast for 20–25 minutes, flipping halfway.
6. Sprinkle Parmesan over carrots and roast 5 more minutes.
7. Garnish with parsley and serve hot.
