Ingredients

2 cups shredded cooked chicken

2 large carrots, sliced

2 celery stalks, diced

1 yellow onion, chopped

3 garlic cloves, minced

3 tablespoons butter

1/4 cup all-purpose flour

5 cups chicken broth

1 cup heavy cream

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

2 tablespoons fresh parsley, chopped

1 cup all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

2 tablespoons melted butter

1/2 cup milk


Instructions

1. Melt butter in a large pot over medium heat. Add onions, carrots, and celery. Cook for 5-7 minutes until slightly soft.

2. Add garlic and cook for 1 minute until fragrant.

3. Sprinkle flour over the vegetables and stir to coat evenly.

4. Gradually pour in chicken broth while stirring. Simmer for 5-6 minutes until slightly thickened.

5. Add heavy cream, shredded chicken, salt, pepper, thyme, and parsley. Simmer on low while making dumplings.

6. In a bowl, mix flour, baking powder, salt, melted butter, and milk until a soft dough forms.

7. Drop spoonfuls of dough on top of the simmering soup. Cover with lid and steam for 15-18 minutes until dumplings are fluffy and cooked through.

8. Garnish with more parsley or cracked pepper and serve hot.

Notes

Don’t overmix the dumpling dough or it can become tough instead of fluffy.

For more depth, add a splash of white wine to the broth while it simmers.

You can substitute cream with whole milk for a lighter version.
