Ingredients
1 tablespoon olive oil
12 ounces andouille sausage, sliced
1 pound large shrimp, peeled and deveined
1 small onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
2 celery stalks, diced
3 cloves garlic, minced
1 1/2 cups long-grain white rice
1 can diced tomatoes
3 cups chicken broth
2 teaspoons Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley
2 green onions, sliced
Instructions
1. Heat the olive oil in a large pot or deep skillet over medium heat, then brown the sliced sausage on both sides.
2. Add the onion, green bell pepper, red bell pepper, and celery, then cook until softened.
3. Stir in the garlic, Cajun seasoning, smoked paprika, salt, and black pepper.
4. Add the rice and stir for 1 to 2 minutes so the grains are lightly coated and toasted.
5. Pour in the diced tomatoes and chicken broth, then stir well and bring to a gentle boil.
6. Reduce the heat to low, cover, and simmer until the rice is tender and most of the liquid is absorbed.
7. Nestle the shrimp into the rice mixture, cover again, and cook until the shrimp are pink and opaque.
8. Let the jambalaya rest for a few minutes, then fluff gently and finish with parsley and green onions before serving.
Notes
Do not overcook the shrimp or they can turn rubbery, so add them only at the end and cook just until pink.
