1 tablespoon olive oil
1 small onion, diced
2 celery stalks, diced
1 cup carrots, shredded or finely diced
3 cloves garlic, minced
1/4 cup all-purpose flour
4 cups chicken broth
2 cups half-and-half
2 cups cooked chicken, shredded
16 ounces potato gnocchi
2 cups fresh spinach, chopped
1/2 cup Parmesan cheese, grated
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Heat the butter and olive oil in a large pot over medium heat.
2. Add the onion, celery, and carrots, then cook until softened.
3. Stir in the garlic and cook for about 30 seconds.
4. Sprinkle in the flour and stir well to coat the vegetables.
5. Slowly pour in the chicken broth while stirring until smooth.
6. Add the half-and-half, shredded chicken, Italian seasoning, salt, and black pepper.
7. Bring the soup to a gentle simmer.
8. Stir in the gnocchi and cook until tender and floating.
9. Add the spinach and Parmesan cheese, then stir until the spinach wilts and the cheese melts.
10. Taste, adjust seasoning if needed, and serve hot.
Notes
Do not boil the soup hard after adding the half-and-half, or the creamy broth can separate instead of staying smooth and velvety.
