Ingredients

1 cup rolled oats

1/2 cup vanilla protein powder

1/3 cup almond butter

2 tablespoons honey or maple syrup

1 tablespoon fresh lemon zest

2 tablespoons fresh lemon juice

1 tablespoon chia seeds

1/4 cup sliced almonds

1/3 cup fresh or thawed blueberries

1 teaspoon vanilla extract


Instructions

1. In a large mixing bowl, combine rolled oats, protein powder, chia seeds, and sliced almonds. Mix well.

2. Add almond butter, honey (or maple syrup), lemon zest, lemon juice, and vanilla extract. Stir until the mixture is thick and evenly combined.

3. Gently fold in the blueberries, being careful not to squish them.

4. Scoop and roll the mixture into bite-sized balls using your hands or a small cookie scoop.

5. Place on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.

6. Store in an airtight container in the fridge for up to 7 days or freeze for up to 2 months.

Notes

For a nut-free version, use sunflower seed butter and swap almonds for pumpkin seeds.

If mixture is too sticky to roll, chill for 10 minutes first or add a tablespoon of oats.

You can enhance the lemon flavor with a drop of lemon extract or extra zest.
