Ingredients

1 and 1/2 cups graham cracker crumbs

1/2 cup butter, melted

1 can (12 oz) evaporated milk, well-chilled

1 package (3 oz) lemon Jell-O

1 cup hot water

1 package (8 oz) cream cheese, softened

1 cup granulated sugar

1/4 cup fresh lemon juice


Instructions

1. Combine graham cracker crumbs with melted butter and press firmly into a 9×13-inch pan. Chill while preparing the filling.

2. Chill evaporated milk in the freezer for 30 minutes, then whip until fluffy. Set aside.

3. Dissolve lemon Jell-O in 1 cup of hot water. Let it cool to room temperature without setting.

4. In a large mixing bowl, beat cream cheese and sugar until smooth.

5. Mix in lemon juice and the cooled Jell-O mixture.

6. Gently fold in the whipped evaporated milk until fully combined.

7. Pour the mixture over the chilled crust and smooth the top.

8. Refrigerate for at least 4 hours, or overnight, until firm.

9. Slice and serve chilled. Add toppings if desired.

Notes

Make sure the evaporated milk is very cold before whipping—this creates the fluffy texture.

Don’t rush the chilling process; it needs at least 4 hours to fully set.

For a firmer crust, bake it for 8 minutes at 350°F, then cool before adding filling.
