Ingredients
24 Oreo cookies, crushed
6 tablespoons melted butter
24 ounces cream cheese, softened
1 cup powdered sugar

8 ounces semi-sweet chocolate, melted

1/2 cup heavy cream (for ganache)
4 ounces dark chocolate, chopped

Instructions
1. Crush 24 Oreo cookies into fine crumbs using a food processor or a zip-top bag and rolling pin.
2. Mix the crumbs with 6 tablespoons of melted butter until combined. Press firmly into a 9-inch springform pan. Chill for 30 minutes.
3. Melt 8 ounces of semi-sweet chocolate and let cool slightly.
4. In a bowl, beat 24 ounces of cream cheese until smooth. Add 1 cup powdered sugar and 2 teaspoons vanilla. Mix well.
5. Fold in the melted chocolate until fully incorporated.
6. In a separate bowl, whip 1 1/2 cups of heavy cream until soft peaks form. Gently fold into the chocolate mixture.
7. Spread the filling evenly over the chilled crust. Refrigerate for at least 6 hours or overnight.
8. For ganache, heat 1/2 cup of heavy cream until just simmering, then pour over 4 ounces of chopped dark chocolate. Let sit, then stir until smooth.
9. Pour the ganache over the chilled cheesecake. Refrigerate 30 more minutes.
10. Top with whipped cream and chocolate shavings if desired. Slice and serve chilled.
