Description

These Mouthwatering Shrimp Tacos are a quick dinner packed with juicy seasoned shrimp, crisp cabbage, creamy toppings, and bright lime flavor. They are an easy recipe for busy weeknights, taco night, dinner ideas, and fresh food ideas when you want something fast, colorful, and seriously satisfying.

Ingredients

1 pound shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon lime juice

8 small tortillas

2 cups shredded purple cabbage

1 avocado, sliced

1 cup pico de gallo

1/2 cup cotija cheese, crumbled

2 tablespoons fresh cilantro, chopped

1/3 cup sour cream or crema

1 lime, cut into wedges

Instructions

1. Pat the shrimp dry and place them in a bowl with olive oil, chili powder, paprika, garlic powder, cumin, salt, black pepper, and lime juice. Toss until evenly coated.

2. Prepare the toppings by shredding the cabbage, slicing the avocado, crumbling the cheese, and setting out the pico de gallo, cilantro, and crema.

3. Warm the tortillas in a dry skillet or directly over a flame for a few seconds per side until soft and pliable.

4. Heat a skillet over medium-high heat and cook the shrimp in a single layer for 2 to 3 minutes per side, or until opaque and lightly golden.

5. Fill each warm tortilla with shredded cabbage, cooked shrimp, pico de gallo, avocado slices, cotija cheese, and cilantro.

6. Drizzle with sour cream or crema and serve with fresh lime wedges.

Notes

Do not overcook the shrimp, because they can turn rubbery very fast once they are fully opaque.
