Ingredients
1 pound ground beef
16 ounces processed cheese block cut into cubes
8 ounces cream cheese cubed and softened
10 ounces diced tomatoes with green chiles undrained
0.25 cup whole milk or half and half
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
0.5 teaspoon smoked paprika
0.75 teaspoon kosher salt
0.25 teaspoon black pepper
0.25 teaspoon cayenne pepper optional
2 tablespoons chopped fresh cilantro for garnish optional
2 Roma tomatoes seeded and diced for garnish optional
Tortilla chips for serving
Instructions
1. Brown the ground beef in a large skillet over medium high heat, breaking it into small crumbles as it cooks, until no pink remains, then drain off any excess grease.
2. Transfer the drained ground beef to the bowl of a slow cooker and spread it in an even layer.
3. Add the processed cheese cubes and cream cheese cubes on top of the beef, followed by the undrained diced tomatoes with green chiles.
4. Pour the milk over everything in the slow cooker, then sprinkle in the chili powder, ground cumin, garlic powder, onion powder, smoked paprika, kosher salt, black pepper, and cayenne pepper if using.
5. Stir gently to begin combining the ingredients, then cover the slow cooker with the lid.
6. Cook the dip on LOW for 2 to 3 hours or on HIGH for 1 to 1.5 hours, stirring every 30 to 45 minutes, until all of the cheese is melted and the mixture is smooth and creamy.
7. Once the dip is fully melted and combined, switch the slow cooker to the WARM setting to keep it hot for serving.
8. Just before serving, sprinkle the chopped fresh cilantro and diced Roma tomatoes over the top of the dip as a garnish if desired.
9. Serve the Crockpot Rotel dip directly from the slow cooker with plenty of tortilla chips on the side for dipping.
10. Stir the dip occasionally while serving to keep the texture smooth and evenly creamy.
Notes
For the smoothest, creamiest dip, be sure to drain the cooked ground beef well and avoid cooking the cheese mixture on high heat for too long, which can cause it to separate or become grainy.
