Ingredients
1 crust store-bought pie crust or homemade shortbread/graham crust
1 cup chopped pecans
2/3 cup brown sugar
1/2 cup corn syrup
2 large eggs
1 teaspoon vanilla extract
1/4 teaspoon salt
3 tablespoons unsalted butter, melted
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.
2. Press the crust into each muffin cup, shaping it up the sides slightly. Chill for 10 minutes.
3. In a bowl, whisk together the brown sugar, corn syrup, eggs, vanilla, melted butter, and salt until smooth.
4. Fold in the chopped pecans.
5. Spoon the mixture evenly into each crust, being careful not to overfill.
6. Bake for 25–30 minutes or until the tops are set and lightly golden.
7. Cool completely in the tin before removing. Serve at room temperature or slightly warm.
Notes
Use silicone muffin pans or liners for easy pie removal.
Don’t overfill the cups—filling can bubble over while baking.
