With cream cheese for extra softness, powdered sugar for that classic snowy finish, and little bits of nutty crunch and chewy cranberry in every bite, they are a simple dessert, easy baking idea, and sweet treat everyone will want to make again.
Ingredients
1 cup unsalted butter, softened
4 ounces cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
3/4 cup finely chopped pecans or walnuts
1/3 cup dried cranberries, finely chopped
1 cup powdered sugar, for coating
Instructions
1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
2. In a large bowl, beat the softened butter, cream cheese, and powdered sugar until light and creamy.
3. Mix in the vanilla extract and salt until combined.
4. Add the flour gradually and mix just until a soft dough forms.
5. Fold in the chopped nuts and dried cranberries until evenly distributed.
6. Scoop the dough into small portions and roll into 1-inch balls.
7. Place the dough balls on the prepared baking sheet with a little space between each one.
8. Bake for 12 to 14 minutes, or until the bottoms are lightly golden and the tops are set.
9. Let the cookies cool for about 5 minutes, then roll them gently in powdered sugar while still slightly warm.
10. Once fully cooled, roll them in powdered sugar again for a thick snowy coating.
Notes
Do not overmix the flour into the dough, or the cookies can lose some of their soft, delicate texture.
