Ingredients
2 1/2 pounds russet potatoes
1/2 cup unsalted butter
8 ounces cream cheese
1 cup sour cream
1/2 cup whole milk
2 cups shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 tablespoons chopped chives
Instructions
1. Peel the potatoes, cut them into chunks, and boil in salted water until fork tender.
2. Drain the potatoes well and let excess steam escape for a minute.
3. Mash the hot potatoes until mostly smooth.
4. Add butter, cream cheese, sour cream, milk, garlic powder, salt, and black pepper.
5. Mix until creamy and smooth without overworking the potatoes.
6. Stir in 1 1/2 cups of the shredded cheddar cheese.
7. Spread the potato mixture into a greased casserole dish.
8. Top with the remaining cheddar cheese and sprinkle paprika over the surface.
9. Bake at 375°F for 25 to 30 minutes, until hot and lightly golden on top.
